Days 26-28 of 90: Where Has the Time Gone
Hi! Um, so I haven't been writing for every night because, well, I honestly forgot to. I'm starting to think that weekly recaps are more my thing instead of daily recaps, ya know?
So, with that, today is my weekly recap from...last week! Duh!
Okay, I've been doing VERY good with my nutrition. EXCEPT, I totally had some cheddar Ruffles the other day because I was craving chips; I'd have to say that it was totally worth it 🤦🏾♀️.
Other than the occasional non-vegan eating (those chips were the only thing), I have been experimenting with recipes!
Yesterday I made oatmeal muffins for breakfast, then some butter lettuce taco wraps. Last night, I attempted to make a vegan pot pie, but I used brown rice flour instead of all purpose. Well, the crust turned out so bad I gave up.
Then, I got some courage and made the all purpose version. Right now it's sitting in the fridge waiting to be put to use.
Oh! Peter and I went to this Korean spot in our city that had spicy tofu stew. Yo! It was the BEST stew ever! I'll definitely be back there.
